Salumi is the word used to describe the smallgoods and dried meats that form an important part of southern European cuisine. These include a wide variety of salami (flavoured with wine, peppercorns, fennel, even truffles). There’s the delectably salty ham prosciutto (cut from the leg or thigh area of the pig and cured), similar to Spain’s Serrano ham and often served cut very thinly and served with melon. Related products are the delicious Parma ham, capocollo and pancetta, all of which can be eaten on their own or to add tremendous flavour to dishes. When served as part of an antipasto platter these smallgoods should be accompanied by fresh bread or crostini and maybe a glass of white wine.
